Crock Pot Meatloaf for one

Cooking for one or two?  Just because you’re not feeding a family of 6 like me doesn’t mean you can’t enjoy a hearty Crock Pot meal without having to dump out tons of leftovers.

That’s why I have started adjusting a bunch of my recipes that typically feed a family, to work for singles and couples. For best results, be sure to cook your meal in a 2 quart Crock Pot. (It will cost you a whopping $10 at Walmart.) Crock Pot Meatloaf is the perfect comfort food and easy to make.  Here’s what you need:

Ingredients

1/2 lb. ground beef (80/20)
1/3 c. milk
1/4 c. bread crumbs
1 egg, beaten
1/4 c. chopped onion
1/4 tsp. salt
1/8 tsp. pepper
1/8 tsp. ground sage
1/8 tsp onion powder
1/8 tsp garlic powder
1 tsp. Worcestershire sauce

Directions

1. Mix all ingredients together in a large bowl.
2. Form into a rounded loaf (the more rounded and less actually ‘loaf’ shaped, the more evenly it will cook in the Crock Pot.)
3. Lightly spray the bottom of the 2 qt. Crock Pot with cooking spray. Place the loaf in the pan and top with ketchup or BBQ sauce. Cook on low for 7-8 hours or on high for 4 hours.
Once it’s done, remove your meatloaf from the Crock Pot and dump out the leftover fat in the garbage when it cools!
