Crock Pot Meatloaf

Meatloaf is already one of my favorite comfort foods, but I always struggled to bake it just right. By the time I got the center fully cooked, the edges were dry. Crock Pot Meatloaf solves that problem; no worries about undercooking or overcooking,

The trick is to shape the meatloaf just a little flatter and more rounded in the Crock Pot so that it cooks up evenly. Simple right? Here’s what you need:

For the single-serving recipe, click here.

Ingredients

2 lbs. ground beef (80/20)
1 c. milk
3/4 c. bread crumbs
2 eggs, beaten
1 onion, chopped
1 tsp. salt
1/2 tsp. pepper
1/2 tsp. sage
1/2 tsp. onion powder
1/2 tsp. garlic powder
1 Tbsp. Worcestershire sauce

Directions

1. Mix all ingredients together in a large bowl.
2. Form into a rounded loaf (the more rounded and less actually ‘loaf’ shaped, the more evenly it will cook in the Crock Pot.)
3. Lightly spray the bottom of the Crock Pot with cooking spray. Place the loaf in the pan and top with ketchup or BBQ sauce. Cook on low for 7-8 hours or on high for 4 hours.
