Cooking for one or two? You can enjoy delicious Crock Pot recipes too, without all those leftovers. What I’ve done is adjust several of my recipes that typically feed a family, to work for singles and couples. Crock Pot Lemon Pepper Salmon is such an unexpected slow cooker meal, but I promise you, it will turn out perfectly.  Just remember to use a 2 quart Crock Pot instead of a larger one. Otherwise these cook times will have to be adjusted. (To see the family-size recipe, click here.) Here’s what you need:

Ingredients

1-4 oz. frozen salmon filet, frozen
Marinade
1/2 c. olive oil
1/4 c. lemon juice
3 tsp. minced garlic
2 Tbsp. Lemon Pepper seasoning (Lawry’s)
2 tsp. salt
Whisk together in a measuring cup. Store remaining marinade in an airtight jar in the refrigerator for up to 2 weeks.

Directions

1. Lightly grease the bottom of a 2 quart Crock Pot with cooking spray. Place the frozen salmon filet in the Crock Pot.
2. Pour just under 1/4 c. of the marinade over the fish. Cover and cook on low for 3-4 hours until fish is fork tender.
3. Optional–After cooking, sear the filet in a skillet over high heat for 1-2 minutes on each side, until both sides are lightly browned.
