Cooking for one or two? Just because you’re not feeding a family of 6 like me doesn’t mean you can’t enjoy delicious Crock Pot recipes too. What I’ve done to help, is adjust several of my recipes that typically feed a family, to work for singles and couples. Crock Pot Chicken Spaghetti is one of our favorites and is full of ingredients that you probably already have in your pantry. Here’s what you need:
1 frozen chicken breast
1/2 of a 24 oz. jar spaghetti sauce
1/2 can diced tomatoes, drained
1/4 c. frozen chopped green peppers
1/4 c. frozen chopped onions
4 oz. sliced mushrooms (optional)
1/2 tsp minced garlic
1 Tbsp. Italian seasoning
1/4 box spaghetti noodles.
1. Place chicken breast in the Crock Pot. Pour additional ingredients over the chicken.
2. Cook on low for 7-8 hours in a 2-quart Crock Pot until chicken is fork tender.
3. About 15 minutes before serving, cook spaghetti according to package to al dente. Add to the Crock Pot or serve over spaghetti noodles.
