Crock Pot Ginger Peach Chicken

There’s no bigger let down than finding a delicious-sounding recipe, only to find that the ingredient list looks like a CVS receipt. Dig a little deeper, and half of the ingredients don’t even exist in the Walmarts and Dollar Generals of small towns. Recipe hunting can be such a challenge for those of us living in rural communities. But, that doesn’t mean that we have to stick to the classics like roast or chicken and dumplings. There’s room to venture out to things like Ginger Peach Chicken without having to special order ingredients. (For the single serving recipe, click here.) Here’s what you need:

Ingredients

3 boneless skinless chicken breasts, frozen
1 c. Peach preserves
1 Tbsp. Soy sauce
1 Tbsp fresh ginger (or 1/4 tsp. ground ginger. But it’s going to be A LOT milder).
1 Tbsp. minced garlic

Directions

1. Put frozen chicken breasts in the Crock Pot.
2. In a small bowl or measuring cup, whisk together peach preserves, soy sauce, ginger and minced garlic.
3. Cover and cook on low for 5-6 hours or on high for 3-4 hours.
4. Shred chicken and return to Crock Pot.
Serve with rice and steamed broccoli!
