Crock Pot Ginger Peach Chicken for One

Cooking for one or two?  Just because you’re not feeding a family of 6 like me doesn’t mean you can’t enjoy a hearty Crock Pot meal without having to dump out tons of leftovers. That’s why I have started adjusting a bunch of my recipes that typically feed a family, to work for singles and couples. For best results, be sure to cook your meal in a 2 quart Crock Pot.

I like Ginger Peach Chicken because it has a savory, sweet and bold flavor that is made with simple ingredients. (See the family-sized recipe here.) Here’s what you need:

Ingredients

1 boneless skinless chicken breast, frozen
1 c. Peach preserves
1 tsp. Soy sauce
1 tsp fresh grated ginger
1 tsp. minced garlic

Directions

1. Put frozen chicken breast in the Crock Pot.
2. In a small bowl or measuring cup, whisk together peach preserves, soy sauce, ginger and minced garlic.
3. Cover and cook on low for 5-6 hours or on high for 3-4 hours.
4. Shred chicken and return to Crock Pot.
Serve with rice and steamed broccoli!
