Crock Pot Chicken and Dumplings for One

Chicken and Dumplings are one of my top 5 favorite comfort foods. Being able to make it easily in the Crock Pot is definitely a plus, but being able to size it down to 1-2 servings is even better. No need to buy more groceries than you need or waste a bunch of food. Crock Pot Chicken and Dumplings for One cooks up perfectly in a 2-quart Crock Pot.

Ingredients

1 chicken breast, fresh or frozen
1 c. chicken broth
1/2 can Cream of Mushroom soup
1/4 c. frozen diced carrots
1/4 c. frozen corn OR 1/2 c. frozen mixed vegetables
1 mini can (5 count) refrigerated biscuits, cut into bite-sized pieces
1 tsp. Soul Food seasoning (Dollar General, Walmart, Kroger)

Directions

1. Put all of the ingredients in a 2 quart Crock Pot and stir until blended.
2. Cover and cook on low for 7-7-1/2 hours until chicken is tender.
3. Remove chicken, cut into bite-sized pieces, and return to Crock Pot.
