Cooking for one or two? Just because you’re not feeding a small army doesn’t mean you can’t enjoy delicious Crock Pot recipes too. What I’ve done to help, is adjust several of my recipes that typically feed a family, to work for singles and couples.
Crock Pot Beef Stew is hearty and simple to make, plus you’ll have enough for 2 meals. Just remember to use a 2 quart Crock Pot instead of a larger one. Otherwise these cook times will have to be adjusted. Here’s what you need:
Ingredients
1/2 lb stew meat
1/2 c. baby carrots
2 celery stalks, sliced into 1″ pieces
2 baby red potatoes
1/2 c. sliced onions
3 Tbsp. McCormick Beef Stew seasoning packet
1 c. water
Directions
- Prepare vegetables and set aside.
- Toss stew meat in 2 tsp. flour. Transfer to a skillet and brown all sides on med. heat (about 3-5 minutes). Place in Crock Pot.
- Transfer to the Crock Pot. Add vegetables, Beef Stew seasoning and water.
- Cover and cook on low for 7-8 hours.
