Mornings are crazy at my house. Most the time, breakfast involves me shoving a pop tart in everyone’s hands on the way out the door. But now, I’ve started making breakfast muffins at least once a week and the kids love them. They’re warm and cheesy and fill their little tummies up much better than sugary breakfast foods.
This a super basic recipe. I did that on purpose so that you could make it your own. Add veggies, sausage, flax seed, just about anything you want, and it will still bake up beautifully. Typically, I mix up all the ingredients the night before, then pop them in the oven when I wake up.
In 20 minutes, my family has breakfast and they can even take it with them if there’s no time left to sit down and eat.
Ingredients
1 c. Bisquik
4 eggs, beaten
1 package fully cooked (microwaveable) bacon, chopped
1 c. shredded cheddar cheese
4 Tbsp. butter, melted
1/4 c. milk
Makes 9 muffins
Directions
1. Preheat oven to 350 degrees.
2. Mix all ingredients together in a large bowl.
3. Pour into lightly greased muffin cups.
4. Bake for 20 minutes at 350 degrees.
