Can you tell I’m a fan of one-dish recipes? They make cooking dinner so easy, don’t they? My family loves pork chops and since they’re so inexpensive, they are a regular on our dinner menu. Finding a way to add variety is where it gets a little tricky. But no worries, I have an option or two for you in the Recipe Box!

Pork Chops, Rice and Vegetables is probably the easiest one-dish meal I make. There is nothing really to prepare. Dump your ingredients in a 13×9 baking dish and you’re in business! Here’s what you need:

Ingredients

1.5 lbs. pork chops (about 7 chops)

2 bag Uncle Ben’s Ready Rice (any flavor, I used brown rice)

1 bag frozen California Blend vegetables

1 packet McCormick’s Bag ‘N Season Pork Chop Seasoning

1/2 stick of butter, melted

1/4 c. water

1/4 tsp. salt

1/4 tsp. pepper

Directions

Preheat oven to 350 degrees.

Line pork chops down the middle of the baking dish. Salt and pepper each one.

Put rice on one side, and vegetables on the other side.

Sprinkle seasoning over the entire dish, then pour butter and water over top.

Cover the dish with foil and cook at 350 degrees for 1 hour. (Check chops at 45 minutes for tenderness, mix rice and stir vegetables. Recover, and continue cooking.)
