Crock Pot Pork Chops and Potatoes {For One}

Cooking for one or two?  Just because you’re not feeding a family of 6 like me doesn’t mean you can’t enjoy a hearty Crock Pot meal without having to dump out tons of leftovers.

What I’ve done to help, is adjust several of my recipes that typically feed a family, to work for singles and couples. Crock Pot Pork Chops and Potatoes is such an easy recipe to make. With only 6 ingredients, you probably already have most of them in your pantry. Here’s what you need:

Ingredients

1 thick cut pork chop
1 red potato, cut into bite-sized pieces
2 Tbsp. onion soup mix
1/4 c. Chicken broth
1 Tbsp. butter
dash pepper

Directions

1. Place pork chop and potato in the Crock Pot.
2. Mix together chicken broth, butter, onion soup mix, and pepper together and pour over the pork chop for 7-8 hours on low in a 2 quart Crock Pot.
