Easy Corn Casserole {with Jiffy mix}

Thanksgiving Corn Casserole

Corn casserole, (or corn pudding, depending on what part of the country you live in) is a staple at our family’s Thanksgiving dinner. Jiffy corn muffin mix adds the perfect amount of breading to turn a creamy corn dish into a fluffy and flavorful breaded corn side dish. It’s easy to make and always a favorite. Here’s what you need:

Ingredients

1 box Jiffy Corn Muffin mix

2 eggs, beaten

1 can creamed corn

1 can whole kernel corn, drained

1 stick of butter, softened

1 c. sour cream

Directions

Preheat oven to 350 degrees.

Combine all ingredients into a large bowl and mix.

Pur into a lightly greased 9 x 13 baking dish.

Bake for 45-50 minutes. The middle should be moist but not runny.
