Crock Pot Chicken and Rice {For One}

Cooking for one or two? You can enjoy delicious Crock Pot recipes too, without all those leftovers. What I’ve done, is adjust several of my recipes that typically feed a family, to work for singles and couples. Crock Pot Chicken and Rice is such a great comfort food, and you’ll have enough for 2 meals. Just remember to use a 2 quart Crock Pot instead of a larger one. Otherwise these cook times will have to be adjusted. Here’s what you need:

Ingredients

1 boneless, skinless chicken breast (frozen or fresh)

1 can Cream of Chicken soup

1/3 c. water

1/3 c. celery, chopped (get the snack-size celery packs in the produce section)

1 tsp. Old Bay Seasoning

2/3 c. uncooked instant rice (or use a Single Serving Minute Rice bowl)

Directions

  1. Place chicken breast in the Crock Pot.
  2. In a bowl, mix together soup, water, celery and Old Bay seasoning. Pour over chicken breast.
  3. Cover and cook on low for 3 hours. Add uncooked rice to the Crock Pot and stir. Continue cooking for an additional 4 hours. If you are using the Single Serving Minute Rice bowl, just microwave the rice and mix it in at the end.
  4. Cut the chicken breast into strips before serving.
