Bourbon Pork Tenderloin {for One}

Have you checked out the Meals for One page yet? I created it just for people who are only looking for one or two servings, not a full size recipe. Instead of making the full Bourbon Pork Tenderloin recipe, I’ve adjusted my kitchen supplies and the ingredients to make it perfect for one or two people.

To prevent over-cooking, be sure to get the right equipment. A mini bakeware set is ideal and you can find them close to the toaster ovens. It saves space, cooks small portions better, and is inexpensive. Here is the exact one I use that I bought from Walmart.

Ingredients

1/2 lb. pork tenderloin

1 sweet potato

1/2 c. sliced onions

1/2 Tbsp of vegetable oil

3 tsp. McCormick Bourbon Pork Tenderloin seasoning (it comes in a packet)

Buying Pork Tenderloin

Since it’s not typical to find pork tenderloin in a 1/2 lb pack, I buy a 2(ish) lb. pork tenderloin. It is usually packed into 2 pieces that I then divide into half. The fourth that isn’t shaded is the one I used for this recipe. The other quarters can be frozen and used for other recipes. (I’ll have plenty to show you later on).

Directions

  1. Preheat the oven to 400 degrees.
  2. Wash and cut the sweet potato into bite-sized pieces. Slice the onion.
  3. In a small bowl, toss the sweet potato and onion in the oil and 2 tsp. seasoning until they are coated. Set aside.
  4. Cover the baking sheet with foil and lightly spray with cooking oil. Pat the pork tenderloin with the remaining 1 tsp. of seasoning and place in the center of the baking sheet.
  5. Spread the sweet potato and onions around the pork tenderloin.
  6. Place in the center rack in the oven and cook for 30 minutes.
  7. Let the tenderloin rest for 10 minutes before eating.

Leftover Seasoning

Since you won’t be using the entire packet, you can store the remaining seasoning it in a Ziploc bag, or pour it in a small spice jar and label it. This is a great spice blend to keep handy.

Here it is! The flavor is great and both the pork and vegetables come out tender.
