If there was a single recipe I would say was worth taking extra time on, it would be old-fashioned banana pudding. There’s just no comparison when you’re talking about the real thing. It’s messier than the quick version and takes more patience, but I promise you, it is worth it. And you will be so proud of yourself when you’re done. Here’s what you need:
2 sticks of butter
2 c. sugar
1 tsp. salt
3/4 c. all-purpose flour
1-12 oz can of evaporated milk
3/4 c. milk
6 egg yolks
1 tsp. vanilla extract
1 bag vanilla wafers
2 bananas, sliced
1. In a large double boiler melt the butter over med. heat. (FYI–My stove cooks on the hot side so you may need to turn the heat up on yours.)
2. Add the sugar, salt, flour, evaporated milk and regular milk. Stir with a whisk.
3. Add the egg yolks to the mixture, constantly stirring until thick. (Note–it took me about 30 minutes of stirring for it to thicken.) Add the vanilla extract.
4. Place the vanilla wafers and bananas into a 9″ x 13″ Pyrex dish. Pour in mixture. Once the banana pudding starts to cool and thicken, add more Nilla wafers to the top.
5. Chill before serving.
