Easy Breezy Egg Bake

Good food = good day! This morning, we started the day off with my Easy Peezy Egg Bake. Life is pretty hectic for us in the mornings, so I don’t have time to prep and cook and serve in the morning and I’m going to guess that you don’t either. But if you have about 20-30 minutes the night before to prep, then the only thing left to do in the morning is pop the egg bake in the oven, let it cook while everyone is getting ready, and eat!

It’s also a great recipe for potluck brunches, breakfast for overnight guests, and holidays! I used tomato, basil and onion today, but you don’t have to, that’s why it’s so easy. You can use bacon, sausage, and basically any other kind of meat or vegetable you want!  The basic rule of thumb I use is this–2 meats, 1 vegetable; 1 meat, 2 vegetables; or 3 vegetables. 

Here are some of the other ingredients you can add:

3/4 c. bacon, cooked and chopped

3/4 c. breakfast sausage, cooked

1/4 c. chopped mushrooms or one-4 oz. can of sliced mushrooms, drained

1/4 c. chopped green peppers

1/4 c.  chopped broccoli florets

1/4 c. fresh spinach, chopped

 

The possibilities are endless! If you want 2 meats/veggies instead of 3, that’s fine! The bake will be extra fluffy, buttery and still delicious. If you want 3-4 ingredients, and it still cooks up beautifully. That’s why it’s one of my favorites. Here’s what you need to make the tomato and basil egg bake featured in the pictures:

Ingredients

3 eggs, beaten

1/2 c. Bisquik

1/4 c. butter, melted

1 c. shredded smoked provolone or cheddar cheese

1 1/2 c. milk

1 ripe tomato, chopped

1 medium red onion, chopped

1/4 c. fresh basil, chopped

1/8 tsp. salt

1/8 tsp. pepper

 

Directions

1. Preheat oven to 350 degrees.

2. Whisk together eggs, milk, butter, and Bisquik until blended.

3. Stir in tomatoes, basil, cheese, salt and pepper.

4. Pour mixture into a lightly greased 8X8 pan.

5. Bake at 350 degrees for 45 minutes. Let the egg bake cool before serving.
